Windsor’s own Will Predhomme is Ontario’s best wine sommelier.

The 28-year-old, now at Toronto’s acclaimed Canoe Restaurant, recently won the prestigious title from the Canadian Association of Professional Sommeliers, Ontario Chapter. His prizes also include trips abroad and entry into the national competition….local sommelier does well

Edinburgh-based Innis & Gunn, which has been selling its oak-aged beers in Canada since 2005, has unveiled its latest special edition, a beer aged in barrels that previously contained Canadian whisky.

“It’s really a gift for our Canadian friends. We’re not releasing it anywhere else in the world,” says Dougal Sharp, brewmaster at Innis & Gunn.

Why a Canadian version? Well, there’s this country’s long tradition of making whisky, for one thing. For another, Canadians – especially Ontarians – have taken to Innis & Gunn’s beers in droves.

Roughly three-quarters of Innis & Gunn’s beer is consumed outside of Scotland. Of that, 60 per cent is sold in Canada.

“It’s our biggest single market, so we wanted to do something special and say thank you,” explains Sharp.

To do that, Sharp went to work trying to find oak barrels that had previously been used to age Canadian whisky. He managed to get some from a distiller here (he didn’t want to say which one), then went to work creating a beer to age in them.

After the beer was brewed, it was aged in the barrels for 77 days. It was the third life for some of those barrels, by the way.

“Before they were used in Canada, some of them were used for bourbon or other spirits, so they were up to 50 years old,” Sharp says.

In addition to several types of malted barley, Sharp decided to use malted rye, to add a reddish tinge to the brew and as a nod to Canadian distilling tradition.

“I know rye is a pretty important ingredient for Canadian whisky, so I thought it would be nice to use some in this beer,” Sharp says.

The resulting beer is darker than the original Innis & Gunn, more reddish-orange than golden. It’s also more complex in flavour, and less overwhelmed by the oak. There’s a bit of the classic vanilla aroma and flavour derived from oak, but not as pronounced as in the original.

Perhaps because of that, other flavours come out, such as dried fruit, the tiniest hint of cocoa, and a bit of a tangy taste (possibly from the rye).

Burke should target Carey Price…

…from the NHL, if the Montreal Canadiens ‘blow it up’ so to speak and redo their team as to get Vincent Lecavalier, I think T.O. should target Carey Price.  The Montreal team is said to be For Sale, half of the players are either restricted or unrestricted free agents, there is a good chance that current gm Bob Gainey could be shown the door, and still the Vinny Lecavalier rumors won’t go away.  Tonight, in the deciding game against  Boston; C.P pulled a Patrick Roy and cheered back to the crowd when the started mock cheering him when he stopped a routine long shot. 

(I say, good on ya Carey… they are as arogant as Michigan Wolverine alumni)

  So, this writer, suggests Mr. Burke swoop down and scoop a beligured, unconfident, Carey Price.  And since T.O. also wants to move up in the draft, they could take on salary in a separate deal from Tampa that could get the #2 pick, which would also help the Canadians even more in a deal for them to get Vinnie out of  Tampa.   … who knows, it may be easier to do, than move to #1 for Tavares.  In conclusion you have your battery of players up the middle for the next number of years.  Last year, D-man, Schenn, this year would be Goalie, Price, and either of Tavares, or Duchene. Nice start I’d say

The welcome Mats … ?

I watched with many million others on what the CBC has portrayed Hockey Day in Canada.  The featured game was the return of Mats Sundin to play the Toronto Maple Leafs with his new team, the Vancouver Canucks.  So often over the years we hear how ‘intelligent’ the Leaf fans are… Well, I am here to write that is a bunch of hog(town) wash.  I felt somewhat embarrassed for the boo birds. This was in my estimate about 20% who just don’t get it.  You will read in many papers how much class Leaf fans showed.  If they were that classy the 80% would not have had to drown out the boo’s. If they were that classy, many more would have stood during the Video tribute about 7 minutes into the first period.  Mats Sundin represented everything good in what a professional athlete should be.  In a sports world that is filled with stories of steroid filled athletes, law breaking ego eccentric punks, we have a talented gentleman from Sweden, that put everything he had in becoming a Canadian icon.  His only crime….. the fact that he wanted to retire a Toronto Maple Leaf.  After what I saw, from some, last night, Leaf Nation doesn’t deserve someone as classy as Mats.Do you want more proof.  Last month when Bryan McCabe returned, the boo birds greeted him with each time he touched the puck.    What was his crime you ask… Well, he just happened to sign a contract in good faith that included a no trade clause because this transplanted American wanted to remain loyal and play with the Leafs. Congrats Mats for scoring the winning goal and sticking it to the one’s who paid to boo you.  I think the true fans didn’t mind too much because we remember what you gave us during your 13 great years in Toronto.  Did you realize that in only one of those thirteen years, Mats was NOT the leading scorer on those teams.  Those teams by the way were not too bad, with 2 final 4 appearances and some unforgettable playoff runs.

Today, I’ll raise a glass of Absolut… Cheers Mats !

Scan data from Information Resources Inc. shows craft beer with a 17.8% increase in supermarket sales for 2006–more growth than any other alcohol beverage category in the supermarket sales channel.
